This is an adaption of a great muffin recipe from Saskatoon, Saskatchewan!
SERVING SIZE: 12 MUFFINS
- ½ cup coconut oil (softened in microwave for 10 seconds)
- 1/2 cup SMARTfx MATCHA raspberry An excellent source of vitamin C, high in antioxidants and a rich source of dietary fiber.* Green Tea
- 1 cup ripe bananas (about 3)
- 2 large eggs
- ¼ cup plain kefir
- 1 tsp vanilla
- 1/3 cup dark chocolate chips
- 1 cup oatmeal
- ¾ cup wheat wheat flour
- ½ cup sunflower seeds
- ¼ cup ground flaxseed
- 2 tsp baking soda
- 1 tsp baking powder
- ½ tsp cinnamon
- Pinch salt
Preheat oven to 350F, line 12 muffin cups with liners. Mix dry ingredients. Combine coconut oil, SMARTfx, bananas, eggs, kefir, vanilla in a large bowl and mix well. Pour wet ingredients into dry ingredients and mix until combined. Spoon into muffin cups and bake for 20-25 minutes.
