This is an adaption of a great muffin recipe from Saskatoon, Saskatchewan!
SERVING SIZE: 12 MUFFINS
½ cup coconut oil (softened in microwave for 10 seconds)
1/2 cup SMARTfx MATCHA raspberry Green Tea
1 cup ripe bananas (about 3)
2 large eggs
¼ cup plain kefir
1 tsp vanilla
1/3 cup dark chocolate chips
1 cup oatmeal
¾ cup wheat wheat flour
½ cup sunflower seeds
¼ cup ground flaxseed
2 tsp baking soda
1 tsp baking powder
½ tsp cinnamon
Pinch salt
Preheat oven to 350F, line 12 muffin cups with liners. Mix dry ingredients. Combine coconut oil, SMARTfx, bananas, eggs, kefir, vanilla in a large bowl and mix well. Pour wet ingredients into dry ingredients and mix until combined. Spoon into muffin cups and bake for 20-25 minutes.
