Matcha Banana Chocolate Chip Muffins
An energizing, antioxidant-rich twist on a Saskatoon favorite!

Ingredients:

½ cup coconut oil (softened in microwave for 10 seconds)

½ cup SMARTfx MATCHA Raspberry Green Tea

1 cup ripe bananas (about 3)

2 large eggs

¼ cup plain kefir
-
1 tsp vanilla extract
-
⅓ cup dark chocolate chips

1 cup oatmeal
-
¾ cup whole wheat flour

½ cup sunflower seeds
-
¼ cup ground flaxseed
-
2 tsp baking soda
-
1 tsp baking powder
-
½ tsp cinnamon

Pinch of salt
Instructions:

Preheat oven to 350°F (175°C) and line 12 muffin cups with paper liners.

In a large bowl, mix all the dry ingredients: oatmeal, flour, sunflower seeds, flaxseed, baking soda, baking powder, cinnamon, and salt.

In a separate bowl, combine the softened coconut oil, SMARTfx MATCHA Raspberry Green Tea, mashed bananas, eggs, kefir, and vanilla. Mix well.

Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the chocolate chips.

Spoon the batter evenly into the muffin cups.

Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
